Ingredients
For the cassoulet
  • 30ml olive oil 
  • 20 GARDEN GOURMET® Sensational™ Cumberland Sausages
  • 200g onions, diced
  • 150g carrots, sliced
  • 400g button mushrooms, quartered 
  • 20g garlic, sliced
  • 5g thyme
  • 150ml white wine  
  • 10g MAGGI® Vegetable Bouillon
  • 400ml water
  • 800g MAGGI® Rich & Rustic Tomato Sauce
  • 400g cannellini beans, rinsed and drained
To serve
  • 600g tenderstem broccoli  
  • 1 lemon
  • 20g sliced almonds, toasted
  • 500g crusty bread 
Preparation

    Prepare the Sausages: Heat half of the olive oil in a sauté pan over medium heat. Brown the GARDEN GOURMET® Sensational™ Cumberland Sausages evenly on all sides. Once browned, remove the sausages from the pan and set them aside.

    Sweat the Vegetables: In the same pan, add the remaining olive oil. Add the diced onions, sliced carrots, quartered button mushrooms, sliced garlic, and thyme. Cook over medium heat, stirring occasionally, for approximately 10 minutes until the vegetables are softened and aromatic.

    Deglaze and Simmer: Pour the white wine into the pan to deglaze, stirring to lift any browned bits from the bottom of the pan. Add the MAGGI® Rich & Rustic Tomato Sauce, water, rinsed and drained cannellini beans, and MAGGI® Vegetable Bouillon. Stir well to combine and bring the mixture to a simmer. Cook for 10 minutes, allowing the flavours to meld together.

    Combine: Return the browned GARDEN GOURMET® Sensational™ Cumberland Sausages to the pan. Transfer the entire mixture to an oven-safe dish. Bake in a preheated oven at 170°C (338°F) for 15 minutes, ensuring the sausages are fully cooked and the cassoulet is bubbly and fragrant.

    Before Service: Steam the Tenderstem broccoli for 3-4 minutes until tender yet crisp. Transfer the steamed broccoli to a bowl and squeeze fresh lemon juice over it. Toss gently to coat the broccoli evenly with the lemon juice.

    Garnish and Serve: Place the lemon-dressed broccoli in a side bowl and garnish with toasted sliced almonds. Serve the broccoli alongside the cassoulet with crusty bread for a complete and satisfying meal.
