- 20 GARDEN GOURMET® Sensational™ Cumberland Sausages
- 1 red onions, sliced
- 500g baby new potatoes, quartered
- 2 red peppers, sliced
- 2 yellow peppers, sliced
- 3 large courgettes
- 3 fat garlic cloves, crushed
- 3tsp cumin seeds
- 3tsp smoked paprika
- 1 lemon, juiced
- Freshly ground black pepper
- 3tbsp olive oil
- 330g cherry tomatoes
- handful flat leaf parsley chopped
- 300g steamed kale

1Preheat the oven to 180°C.

2Put the onion, potatoes, peppers, and courgettes into a large roasting tin.

3Mix the crushed garlic with the oil, lemon juice and spices.

4Season with salt and black pepper and then whisk with a fork.

5Pour the marinade over the veg and cover with foil.

6Roast in the oven for 30 minutes.

7Remove the foil, add the sausages and tomatoes, toss everything together and roast for a further 20-30 minutes until the sausages are browned.

8Steam the kale and serve!
