Ingredients
  • 20 GARDEN GOURMET® Sensational™ Cumberland Sausages
  • 1 red onions, sliced
  • 500g baby new potatoes, quartered 
  • 2 red peppers, sliced
  • 2 yellow peppers, sliced
  • 3 large courgettes
  • 3 fat garlic cloves, crushed
  • 3tsp cumin seeds
  • 3tsp smoked paprika 
  • 1 lemon, juiced
  • Freshly ground black pepper
  • 3tbsp olive oil 
  • 330g cherry tomatoes
  • handful flat leaf parsley chopped 
To serve:
  • 300g steamed kale
Preparation

    Preheat the oven to 180°C.
  • 2
    Put the onion, potatoes, peppers, and courgettes into a large roasting tin.

    Mix the crushed garlic with the oil, lemon juice and spices.
  • 4
    Season with salt and black pepper and then whisk with a fork. 
  • 5
    Pour the marinade over the veg and cover with foil. 
  • 6
    Roast in the oven for 30 minutes. 
  • 7
    Remove the foil, add the sausages and tomatoes, toss everything together and roast for a further 20-30 minutes until the sausages are browned.
  • 8
    Steam the kale and serve!
