Chicken Milanese a Caballo with Chimichurri Rojo
Milanesa a Caballo, or Argentinian Milanesa on Horseback, is a beloved dish traditionally made with steak. Our version takes inspiration from both South American cuisine and the Italian classic Chicken Milanese, featuring a mouth-watering golden, crispy chicken escalope topped with a fried egg.
This combination of tender chicken made with MAGGI® Liquid Seasoning and rich, runny yolk creates an irresistible dish that’s sure to impress. The rich Chimichurri Rojo sauce, crafted with MAGGI® Rich & Rustic Tomato Sauce, red wine vinegar, and fresh herbs, adds a zesty finish. - 1.2kg Chicken Breast
- 30ml MAGGI® Liquid Seasoning
- 250g eggs
- 250g breadcrumbs
- 5g dried oregano
- 50ml vegetable oil
- 100g MAGGI® Rich & Rustic Tomato Sauce
- 20ml red wine vinegar
- 60g olive oil
- 50g red onions, diced
- 20g parsley, roughly chopped
- 20g coriander, roughly chopped
- 5g paprika
- 2g dried oregano
- 10ml lemon juice
- 10 eggs

1To prepare the chicken milanese: In a deep tray, whisk together the eggs and MAGGI® Liquid Seasoning until well combined

2Dip each piece of chicken breast first into the egg mixture, allowing excess to drip off.

3Then, coat the chicken in the breadcrumb mixture, ensuring it is fully covered. Repeat this process for all chicken pieces.

4Heat the vegetable oil in a frying pan over medium heat and fry the chicken for 3 minutes on each side until golden brown.

5Transfer the fried chicken to an oven tray and bake in a preheated oven at 200 ºC (392 °F) for an additional 6 minutes, or until fully cooked and crispy.

6To make the chimichurri: In a mixing bowl, combine all the ingredients: MAGGI® Rich & Rustic Tomato Sauce, red wine vinegar, olive oil, diced red onions, parsley, coriander, paprika, dried oregano, and lemon juice.

8To finish: In a separate pan, fry the eggs and place the crispy chicken milanese on a serving plate.

9Top each piece with a fried egg and generously spoon over the Chimichurri Rojo.
