- 800g Garden Gourmet Pulled Fillet
- 30ml vegetable oil
- 10g curry powder
- 100g plant-based mayo.
- 50ml plant coconut yoghurt
- 50g mango chutney
- 30g sultanas
- 20g coriander, chopped
- 100g spring onions, sliced
- 20 slices of white bloomer
- 100g plant spread
- 200g little gem lettuce
- 50g baby spinach
- 500g beef tomato, sliced

1To Prepare the Coronation “Chicken”: In a bowl, combine the oil and curry powder. Pour this mixture over the Garden Gourmet Pulled, and mix well. Transfer the mixture onto an oven tray.

2Grill the coronation “chicken” for 5-6 minutes, or until golden brown. Remove from heat and allow to cool.

3Once cooled, mix the grilled “chicken” with the remaining ingredients and set aside.

4To Serve: Spread plant-based butter on the bread.

5Spoon the coronation “chicken” mixture on top of the buttered bread, then layer with tomato, lettuce, and spinach for all the sandwiches.

6Cut the sandwiches in half and serve.
