Ingredients
For the Coronation “chicken”
  • 800g Garden Gourmet Pulled Fillet
  • 30ml vegetable oil
  • 10g curry powder
  • 100g plant-based mayo.
  • 50ml plant coconut yoghurt
  • 50g mango chutney
  • 30g sultanas
  • 20g coriander, chopped
  • 100g spring onions, sliced
To Finish
  • 20 slices of white bloomer
  • 100g plant spread
  • 200g little gem lettuce
  • 50g baby spinach
  • 500g beef tomato, sliced
Preparation

    To Prepare the Coronation “Chicken”: In a bowl, combine the oil and curry powder. Pour this mixture over the Garden Gourmet Pulled, and mix well. Transfer the mixture onto an oven tray.

    Grill the coronation “chicken” for 5-6 minutes, or until golden brown. Remove from heat and allow to cool.

    Once cooled, mix the grilled “chicken” with the remaining ingredients and set aside.

    To Serve: Spread plant-based butter on the bread.

    Spoon the coronation “chicken” mixture on top of the buttered bread, then layer with tomato, lettuce, and spinach for all the sandwiches.

    Cut the sandwiches in half and serve.
