Green Risotto with Cumberland Sausage

This vegan risotto recipe is a classic that can really impress. A vibrant green risotto recipe that is under 600 calories with oodles of flavour for everyone to enjoy, even the most committed meat eater wouldn’t turn their nose up at this dish. This sausage risotto recipe is ready in just 30 minutes, allowing you shout ‘service!’ in no time.  

Ingredients
  • 10 GARDEN GOURMET® Sensational™Cumberland Sausages
  • 4 medium onions, peeled and finely chopped
  • 2 tbsp of olive oil  
  • 4 cloves garlic, finely chopped
  • 500g arborio rice
  • 150g spring onions, washed, topped tailed and cut into 2cm slices  
  • 250g asparagus, washed and cut into 2cm slices
  • 100g curly parsley, finely chopped
  • 200ml white wine 
  • 2 litres boiling water
  • 40g vegan vegetable stock  
  • 100ml vegan single cream
  • 200g garden peas 
  • 150g fresh spinach 
  • 100g fresh chervil
  • 100g pea shoots
  • 10g lemon zest
Garnish (if applicable):
  • 100g curly parsley sprigs
Preparation

    To cook the GARDEN GOURMET Sensational™ Cumberland Sausages, add 1tbsp of oil to a large frying pan and cook the sausages according to the cooking instructions on pack. Once cooked, slice into 2cm slices.

    Heat another large pan, add the rest of the oil, and sauté the onion and garlic until golden brown.

    Stir in the rice, sauté for 5 minutes until translucent, then add the wine, and reduce.

    Add the water, vegetable stock, stir and let simmer under a lid for 25 min over a medium heat.

    Check to make sure the rice is cooked, adding more water if required.

    When the rice is just cooked, add the GARDEN GOURMET® Sensational™ Sausage, peas, parsley, spring onions, asparagus, and cream, let it cook for 5 min over a low heat.

    Mix in fresh spinach, herbs and lemon zest just before serving.
