Ingredients
For the eggs:
  • 1.5kg eggs (approx. 3 eggs per portion)
  • 150g unsalted butter
  • 150ml half-fat crème fraîche
  • 20g MAGGI® Truffle Seasoning
  • 20g chives, finely chopped
To finish:
  • 800g asparagus
  • 1g sea salt
  • 50ml lemon juice
  • 500g sourdough bread, sliced
Preparation

    Prepare scrambled eggs: Crack and whisk eggs until fully combined. Then melt butter gently in pan over low heat.

    Add eggs and cook slowly, stirring continuously. Cook until just set and remove from heat.

    Season with MAGGI® Truffle Seasoning and fold in crème fraîche.

    To finish: Trim asparagus and steam until al dente. Season with sea salt and lemon.
