- 1.2kg red potatoes
- 20g MAGGI® Truffle Seasoning
- 20g unsalted butter, melted
- 80g light mayonnaise
- 20g chives, finely chopped

1To make the hash browns: Peel and grate the potatoes, then wash under cold water to remove excess starch.

2Drain and squeeze out any liquid, then season with half the MAGGI® Truffle Seasoning and half the melted butter.

3Transfer mixture to a vacuum-sealed bag, then steam at 100°C for 40 minutes.

4After steaming, allow to cool then press and chill for 2 hours minimum. Then cut into precise shapes using a sharp knife or cutter.

5For the mayonnaise: Combine remaining MAGGI® Truffle Seasoning with mayonnaise until smooth. Transfer to a squeezy bottle and keep refrigerated until service.

6To finish: Fry hashbrowns until golden and crisp on all sides, then drain off excess oil.

7Arrange hash browns neatly, pipe with truffle mayo, then finish with a sprinkle of chopped chives.
