- 400g cherry tomatoes
- 100g vegan hard cheese
- 250ml soya yoghurt
- 50g Nutritional yeast
- 10g garlic
- 50ml olive oil
-
1To make the dressing, place all the ingredients into a blender and blitz until smooth. Set aside.
-
2Pre-heat oven 180°C (350°F).
-
3Toss the ciabatta cubes with the oil then place on to an oven tray and bake for 15 minutes or until golden. Then remove and allow to cool.
-
4Deep fry the GARDEN GOURMET® Pulled Fillet for 2-3 minutes at 180°C (350°F) until crispy. Remove and drain any excess oil.
-
5Place the lettuce into a mixing bowl then pour in half the dressing and toss to coat evenly. Divide the dressed lettuce among serving plates.
-
6Arrange the croutons, cherry tomatoes, and toasted pine nuts over the lettuce. Add the crispy Garden Gourmet® Pulled Fillet pieces.
-
7Finish with shavings of vegan hard cheese and drizzle the remaining dressing over the salad.
This recipe can also be made into a Caesar baguette or wrap. Swap with a vegan dressing and hard Italian cheese to make vegan. You can also use GARDEN GOURMET® Pulled fillet as alternative.
