Vegetarian Caesar Salad Recipe

Looking for inspiration to elevate your menu? This recipe is the perfect foundation to start with to add vegetarian options to your menu. Our Garden Gourmet® Vegetarian Caesar Salad is a blend of flavours and textures that will leave your diners wanting more. A great vegetarian menu idea, it can be made into a vegan recipe too (see additional information below). This recipe combines Garden Gourmet® fillet pieces, toasted pine nuts, and ciabatta croutons. Plus, it’s a simple (and guilt-free) way for your customers to get one of their five-a-day servings.

Ingredients
For the salad
  • 800g GARDEN GOURMET® Fillet Pieces
  • 150g Ciabatta, diced
  • 25ml olive oil
  • 1200g Romain lettuce (torn)
  • 50g Toasted pine nuts
  • 400g cherry tomatoes
  • 100g vegan hard cheese
For the dressing
  • 250ml soya yoghurt
  • 50g Nutritional yeast
  • 10g garlic
  • 50ml olive oil
Preparation

    To make the dressing, place all the ingredients into a blender and blitz until smooth. Set aside.

    Pre-heat oven 180°C (350°F).
  • 3
    Toss the ciabatta cubes with the oil then place on to an oven tray and bake for 15 minutes or until golden. Then remove and allow to cool.

    Deep fry the GARDEN GOURMET® Pulled Fillet for 2-3 minutes at 180°C (350°F) until crispy. Remove and drain any excess oil.

    Place the lettuce into a mixing bowl then pour in half the dressing and toss to coat evenly. Divide the dressed lettuce among serving plates.

    Arrange the croutons, cherry tomatoes, and toasted pine nuts over the lettuce. Add the crispy Garden Gourmet® Pulled Fillet pieces.

    Finish with shavings of vegan hard cheese and drizzle the remaining dressing over the salad.

This recipe can also be made into a Caesar baguette or wrap. Swap with a vegan dressing and hard Italian cheese to make vegan. You can also use GARDEN GOURMET® Pulled fillet as alternative.
