What makes our Vegetarian Mediterranean Sandwich recipe special:

This sandwich recipe is so versatile. It works great as a cold sandwich, but even better as a toasted panini style sandwich. We have used the GARDEN GOURMET® Fillet Pieces, but you can just as easily use the GARDEN GOURMET® Sensational™ Pulled Fillet or the GARDEN GOURMET® Vegan Balls

Ingredients
  • 600g GARDEN GOURMET Fillet Pieces
  • 15ml CHEF® Vegetable Liquid Concentrate
  • 30ml olive oil
  • 200g grilled courgette
  • 200g grilled aubergine
  • 200g grilled peppers
  • 80g rocket
  • 40g CHEF® Signature Black Garlic Paste
  • 200g light mozzarella cheese
  • 100g semi dried tomatoes
  • 150ml light nut free pesto
  • 10 slices of sour dough bread 80-100g
Preparation

    Defrost GARDEN GOURMET Fillet pieces and season with CHEF Vegetable Liquid Concentrate and olive oil
  • 2
    Marinade and season courgettes, aubergine, bell peppers with CHEF Signature Black Garlic Paste, salt and pepper.
  • 3
    Build the vegetarian sandwich recipe by spreading the pesto on the bread and place all the remaining ingredients in the sandwich.

The vegetarian Mediterranean sandwich can be served hot & cold.
