Ingredients
For the Sweet Buns:
  • 280g strong flour
  • 55g sugar
  • 4g instant yeast
  • 150ml milk, warmed
  • 1 egg yolk (21g)
  • 20g honey
  • 55g butter
  • 1g salt
For filling and garnish:
  • 200 ml whipping cream
  • 25g icing sugar
  • 50g AERO® Chocolate Mix-in

    Prepare the Dough: In the bowl of a stand mixer, combine the strong white flour, sugar, and dried yeast. Mix briefly to combine.

    Add the warmed milk, honey, and egg yolk to the dry ingredients. Mix on medium speed for 5 minutes until well combined.

    Gradually add the softened butter, a little at a time, mixing continuously. Finish by adding the salt and mix for an additional 10 minutes until a soft, elastic dough forms.

    Cover the bowl with cling film and allow the dough to rise in a warm place for 1 hour, or until doubled in size.

    Once risen, divide the dough into equal portions (approximately 80g each). Shape each portion into a bun and place them onto a baking sheet lined with parchment paper.

    Cover the buns loosely with cling film and allow them to rise again for 1 hour.

    Prepare the Chocolate Cream: Once the buns are cool, melt three-quarters of the AERO® Chocolate mix-in. In a separate bowl, whisk the whipping cream and icing sugar until soft peaks form. Gently fold in half of the melted AERO® Chocolate mix-in until fully incorporated.

    Assemble the Cream Buns: Cut each bun in half horizontally. Pipe the chocolate cream generously into the centre of each bun.
