In just 15 minutes of prep and 10-15 minutes of baking, you can create a refined dessert that features the sweetness of MILKYBAR® Mix-in White Chocolate Chips and the tartness of pitted cherries in syrup.

- 10 mini croissants
- 1 egg white
- 40g flaked almonds
- 30g salted butter, softened
- 25g light brown sugar
- 50g ground almonds
- 1/2tsp almond extract
- 1 egg yolk
- 50g pitted cherries in syrup, plus 4tbsp syrup
- 60g MILKYBAR® Mix-in White Chocolate Chips
- 1 tbsp Icing sugar, for dusting

1To Make the Frangipane: Place the butter, sugar, ground almonds, almond extract, egg yolk and cherries into a blender and blitz until smooth and spoon into a piping bag.

2To Assemble Cut the croissants lengthways, brush the cut sides with some of the reserved cherry syrup then pipe in a little frangipane into each base

3Replace the tops and place on to an oven tray and lightly whisk the egg white and reserved cherry syrup then brush over the tops of each croissant.

4Pipe the remaining frangipane onto the centre and finish with the flaked almonds

5Heat the oven to 160C fan. Bake for 10 minutes or until the almonds are golden and the frangipane is set.

6Remove from the oven and allow to cool on a wire rack

7Melt the MILKYBAR® Mix-in White Chocolate and drizzle over the croissants and once set dust with icing sugar.
