Ingredients
For the masala chicken:
  • 20ml vegetable oil
  • 100g masala curry paste
  • 1.2kg chicken breast
For the fries:
  • 1.2kg sweet potato fries
  • 100g grated cheddar
  • 150g red onion, thinly sliced
  • 250g cucumber, diced
  • 500g lettuce, shredded or chopped
  • 100ml sweet yoghurt
  • 150ml MAGGI® Hot & Sweet 
  • 50g pomegranate seeds
  • 20g green chilli, thinly sliced
  • 10g fresh coriander
Preparation

    To prepare the chicken: In a large mixing bowl, combine oil and masala curry paste. Mix well until you have a smooth coating mixture.

    Add the chicken breasts to the bowl and coat them thoroughly with the marinade.

    Cover the bowl with cling film and marinate for at least 2 hours in the fridge (overnight for best flavour).

    To cook the chicken: Roast for 12–15 minutes, or until the internal temperature reaches 75°C (165°F) and the chicken is fully cooked.

    Remove from the oven and let it rest for 5 minutes.

    Using two forks, shred the chicken into bite-sized pieces.
  • 7
    To cook the fries: Spread the sweet potato fries evenly on a baking tray and cook until crisp and golden. (usually 20–25 minutes)

    While still hot, sprinkle grated cheddar cheese over the fries so it melts slightly.

    To assemble the fries: Scatter the shredded masala chicken evenly over the fries.

    Add the sliced red onion, diced cucumber, shredded lettuce and pomegranate seeds on top.

    Drizzle the sweet yoghurt and MAGGI® Hot & Sweet sauce generously over the loaded fries, and finish with sliced green chillies for heat and fresh coriander leaves.
