Banoffee Rolo® Cookies
These cookies are a great addition to your menu made specifically for chefs and operators. Ingredients
- 220g overripe bananas
- 100g eggs
- 75g maple syrup
- 40g peanut butter
- 40g baking spread, melted
- 210g oats
- 60g ground almonds
- 30g mixed seeds
- 60g Rolo Mix-ins
- 1g salt
- 1g ground cinnamon
Preparation

1Pre-heat oven to 170°C

2Place the bananas, egg, maple syrup, peanut butter and baking spread into a blender and blitz to combine.

3In a separate mixing bowl, add the oats, ground almonds, mixed seeds, cinnamon and salt to a bowl. Pour in the blended banana mix and stir to combine.

4Shape into rounds then place on to a lined baking tray. Gently press in the Rolo Mix-ins.

5Bake for 12-14 minutes or until golden then remove and allow to cool on a wire rack.
