Smarties® Iced Buns
The foundation of our iced buns is a wonderfully soft, light dough, made with a hint of lemon zest to give it a fresh, clean taste. Each bun is then generously topped with a smooth, crisp layer of icing that provides a satisfying snap. The final touch is a scattering of colourful milk chocolate SMARTIES® Mini Mix ins, which adds a fun, crunchy texture and a flavour everyone knows and loves. - 250g strong white flour
- 250g plain flour
- 125ml warm water
- 125m warm milk
- 7g dried yeast
- 1g salt
- 50g caster sugar
- 5g lemon zest
- 50g egg
- 50g butter
- 60g icing sugar
- 10ml water
- 80g Smarties mix-in

1Preheat oven to 170°C.

2In a large mixing bowl, add both flours, the warm water, warm milk, dried yeast, salt, caster sugar and lemon zest.

3Add the beaten egg and the softened butter. Continue mixing until the dough forms, then knead for 5 minutes.

4Place the dough back into the bowl and cover with cling film. Leave it to prove for 1 hour.

5Divide the dough into portions, shape into rounds and place onto the baking trays. Then cover with a tea towel and set aside to prove for a further 30 minutes.

6Bake the buns for 20–25 minutes, or until well risen and golden brown. Remove from the oven and transfer to a wire rack to cool completely.

7Mix the icing sugar with the water to form a smooth, slightly thick icing. Dip the tops of the cooled buns into the icing, coating them evenly.

8Sprinkle the Smarties Mixins over the buns and leave to set before serving.
