Ingredients
  • 120ml semiskimmed milk
  • 120ml water
  • 100g butter
  • 15g sugar
  • 150g plain flour
  • 100g eggs
Preparation

    Preheat the oven to 170°C

    In a medium saucepan, combine the milk, water, sugar and butter. Bring to a gentle simmer, until the butter has melted.

    Add the flour then cook for 4-5 minutes, mixing until the dough forms and starts pulling away from the sides of the pan.

    Place into a mixer and mix on low speed. Allow to cool slightly, then gradually add the eggs and mix until smooth.

    Spoon the choux pastry into a piping bag, a pipe small rounds onto a lined tray.

    Bake for 20 minutes, then open the oven door slightly and leave the pastries inside for a further 10 minutes.
