He began his career in hospitality as a Kitchen Porter at the age of 16, working his way up through the ranks to Head Chef just 7 years later. Mark is grateful that his role allows him to share his knowledge and passion for the industry, hoping to inspire and develop the next generation of Chefs. Mark says he is honoured and excited to be a part of the Toque d'Or judging team this year and we are delighted to have him on board!

Since its inception in 2015 the HIT Chef Academy has risen to meteoric acclaim and continues to deliver high quality development and training to the industry and HITs Apprentices from 19 sites across the country. The Chef Academy headed up by Paul and his team of expert Chef trainers strives to be at the very forefront of Chef development with a constantly evolving, dynamic and challenging curriculum to enrich and develop the Chefs of the future.
Paul has judged the apprentice competition for the last couple of years and is adding the college competition to his remit for 2019!
