Celebrating over 40 years of excellence

In France, 1976, our team of chefs developed the first and iconic dehydrated “Thickened Veal Jus” recipe with the ambition to help professional chefs uphold their high standards in increasingly challenging kitchen environments.

Over 40 years later our ambition hasn’t changed and since then we have developed lots of new products and partnered with leading chefs to ensure we deliver on our commitment to our customers, the chefs.



Created by chefs for chefs, our flagship range of All Natural Stocks are made with nothing but bones, vegetables, and herbs following the traditional recipe to provide chefs with consistency and balance, similar to scratch made stocks.


Each bottle is made with at least 40% of main ingredients to deliver authentic taste. Unlike pastes and powders, our liquid concentrates dissolve instantly and can be added at any stage of cooking, hot or cold. Ideal for anything from stocks and marinades to sauces and dressings.




Made with 25% lobster content for an intense, fresh flavour, this versatile paste eliminates the need for a demanding stock pot and is ready in minutes to create decadent lobster sauces, creams, stocks or risottos.


One of the most loved and iconic products from CHEF, our dehydrated range save chefs valuable preparation time without sacrificing on rich, fresh flavour. Delicate in colour, our powders dissolve instantly so you can stir them straight into dishes to thicken and add body.

CHEF All Natural Stocks are traditionally made based on Escoffier principles to deliver scratch-made quality stocks.


First, raw ingredients are delivered and the bones are carefully sorted by size and part. We use only the best marrow, rib and shank bones to extract the best flavour.


The selected bones are then roasted with vegetables until golden brown to create a depth of flavour.


We add a flavourful blend of herbs and spices.


We then simmer our stocks in large kettles for 2-12 hours depending on which stock is being prepared — true to Escoffier principles.


Stocks rest for 4 hours after boiling to infuse and develop flavours.


In order to give our stocks their silky finish, we reduce them by 80%.


In order to make it to your dry store, the stock is UHT treated that allows for an extended shelf life of 12 months with no preservatives. The process guarantees the integrity of the stock is kept to ensure chefs receive scratch-made flavour stock.

Chef: Darren Chapman

Darren has worked in the industry for 27 years ranging from fine dining hospitality to being a head chef in a 4* hotel and gaining 2 AA Rosettes. Since he joined Nestlé Professional, Darren has accompanied numerous customers to support them in developing their business. Always keen to learn new aspects of the kitchen, he also gained a certification in Advanced Patisserie in order to widen his expertise and be able to better support customers.



Chef: Geoff Cantillion

Geoff joined Nestlé in 2016 and brings with him a wealth of culinary knowledge. He has worked as a chef for over 20 years, covering all forms of catering over the years and in the last decade, has focused on food development within manufacturing. Geoff recently joined the CHEF team as his passion lies in working with catering businesses to help them develop solutions to sustainably and profitably grow their business.

Marketing: Charlotte Ponti

Her passion for gastronomy brought Charlotte to work in marketing for the prestigious Alain Ducasse in Paris as well as participate to the opening of a restaurant in Geneva. “Throughout my experience working with chefs I realised that high quality culinary solutions are necessary to help chefs and address some of the challenges they face on a daily basis. I can confidently say that this is what we are working on delivering every day at CHEF. Our love for the industry is the drive of the team.”



Marketing: Josselyn Buck

A foodie at heart, Josselyn comes from Seattle, Washington and has worked in the hospitality industry for 6 years. Since joining the team she says, “It’s clear that what sets our brand apart is the truly dedicated team of professionals that constantly strive to create a range of products that are best in class for professional kitchens.”
