Peach Brûlée

Every menu should have a brûlée and this one is extra special with a peach layer.

INGREDIENTS

500ml semi-skimmed milk

500ml whipping cream

110g NESTLÉ® Docello™ Crème Brûlée Mix

3 ripe peaches, thinly sliced

250g caster sugar, for glazing

METHOD

Prep: 10 minutes. Cook: 5 minutes. Chill: 60 minutes

  1. Heat the milk and cream in a saucepan and bring to the boil. Remove from the heat and stir in the brûlée powder, whisking continuously for approximately 2 minutes.
  2. Pour the crème brûlée mix into 10 desired moulds and place in the fridge to set for approximately 60 minutes.
  3. Once set, lay the peach slices evenly around the top of each mould.
  4. Dust with the caster sugar. To glaze, gently blowtorch the top of the brûlées or place under a hot grill to caramelise the sugar.

CHEF'S TIP

Replace the peaches with any seasonal fruit. Add a few crunchy nuts to garnish, roughly chopped pistachios would work well with peaches
