What Makes Our Vegetarian Stir Fry Noodle Recipe So Special

These vegetarian stir fry noodles use hoisin sauce but you can go ahead and try with your favourite sauce – sweet chilli, chow mein, katsu or sweet and sour. All work well in bringing their amazing flavour to our meatless stir fry recipe. A portion of this recipe even provides 2 of your recommended 5 a day portions of fruit and vegetables. INGREDIENTS

750g Garden Gourmet Fillet Pieces

300g hoisin stir fry sauce 

190g mange tout

190g beansprouts

100ml water

2tbsp olive oil 

2 large onions, sliced 

3 yellow peppers, sliced 

3 red peppers, sliced 

To serve:

650g fine egg noodles 

5 spring onions, finely sliced 

2tsp sesame seeds 

Squeeze of lime juice

METHOD

Prep time: 10 minutes Cooking time: 15 minutes

  1. Cook the egg noodles according to the packet instructions.
  2. Heat the oil in a frying pan, add the onion, peppers and stir-fry over a high heat for 2-3 minutes. Add the hoisin stir fry sauce, 100ml of water and the mangetout and cook for 2 minutes. 
  3. Add the fillet pieces and beansprouts and fry for 4-5 minutes.
  4. Serve with noodles and top with the spring onions and sesame seeds.  Finally add a squeeze of lime juice.

CHEF'S TIP

If you have more time for our vegetarian stir fry noodle recipe – why not try adding some grated root ginger, garlic and chilli to the mix for extra flavour.

To make this a vegan option, simply substitute the egg noodles with either rice or wheat noodles.
