What Makes Our Veggie Fajita Recipe So Special

This vegetarian Fajita recipe serves 10.

 

INGREDIENTS

750g pack Garden Gourmet Fillet Pieces

2tbsp olive oil

3 red pepper, sliced

3 yellow pepper, sliced

2 large onions, sliced

2½ tbsp fajita seasoning mix

To serve:

20 small seeded or wholewheat wraps 

2 x 200g cans sweetcorn in water, drained

250g fresh tomato salsa

200g half fat grated mature cheese

500g bag salad leaves

65g coriander leaves

3 small avocado, diced

1 red onion, diced

Squeeze of lime juice

Freshly ground black pepper

METHOD

Prep time: 10 minutes Cooking time 15 minutes

  1. Preheat the oven to 180°C (160°C for fan ovens) or Gas Mark 4.  Cover the wraps in a large sheet of foil. Place on a baking tray and warm in the oven for 5-8 minutes.
  2. Heat the oil in a large non-stick frying pan and cook the peppers and onion until they start to caramelise, set aside on a plate.  Add the fillets pieces to the pan and cook until turning light golden brown, return the vegetables to the pan, add the seasoning and cook for a further minute.
  3. Make a quick corn salsa – mix the sweetcorn with the diced onion, avocado and lime juice.  Sprinkle with the coriander leaves.  Season to taste with black pepper.
  4. Place everything into bowls or plates on the table and let everyone help themselves!
