American Chicken Sub

10 chicken breast, portions
1 large egg, beaten
100g MAGGI® Southern Fried Crunchy Bake
100g light mayonnaise
10 sub rolls, halved lengthways
100g tomato, thinly sliced
100g red onion, thinly sliced
10 reduced fat cheese slices, cut in half diagonally
150g chunky salsa
Prep: 10 minutes. Cook: 25-30 minutes.
- Preheat the oven to 200*C (fan 180*C). Line a baking tray with parchment and place into the oven to preheat while preparing the chicken.
- Dip the chicken into the beaten egg to coat. Press each piece of chicken firmly into the Crunchy Bake mix to coat evenly. Place onto the preheated baking tray and bake for 20-25 minutes, depending on the portion size. Ensure the chicken reaches a minimum core temperature of 75˚C.
- Spread a thin layer of mayonnaise over the cut side of each sub roll. Layer with slices of tomato and red onion. Slice the chicken and arrange the chicken and the cheese over the top. Pop back into the oven for 5 minutes until the cheese has melted. Spoon over the salsa to serve.
The chicken can be coated up to 30 minutes before cooking. Cover and chill until ready to cook.
