FLAVOUR OVERVIEW

Black Garlic

  • While a niche flavour, its popularity has increased and is now appearing more and more on menus
  • Goes well with squid, turbot, octopus, sea bream, cod, beef and lamb
  • Popular applications include sauces, hummus, mayonnaise and aioli
  • Made by preserving garlic by slow fermentation removing the hassle of fermenting garlic for up to 90 days
  • More efficient compared to scratch-made, with impactful flavour

     

Lemon

  • Delivers the taste of preserved lemon. While a niche flavour, its popularity has increased as it differentiates from traditional lemon
  • Goes well with salmon, chicken, vegetables and labneh dishes
  • Popular applications include marinades, dressings and mayonnaise
  • Created to provide the taste of traditional 6 month preserved lemons from the Mediterranean region
  • Add to a range of dishes for an intense lemon hit

Red Wine and Port

  • A classic flavour still very much on trend 
  • Goes well with beef, lamb, pork and chicken 
  • Popular applications include sauces, jus gravies and vinaigrettes 
  • Made from 7 litres of the same wine per pot 
  • Grapes from France and Portugal 
  • Avoid taking glass and leftover bar wines into the kitchen delivering inconsistent tasting sauces

White Wine

  • A classic flavour still very much on trend
  • Goes well with mussels, prawns, scallops, shrimp, salmon and chicken

Gastrique

  • A basic gastrique is a reduction of vinegar and sugar that can be infused with just about anything to add depth and complexity of flavours
  • A subtle, syrupy sweet and sour sauce. It can be used on its own as a drizzle, particularly with meats such as pork, game, or strongly-flavoured fowl, or added to stocks and sauces
  • Designed to deliver a consistent taste boost through a liquid seasoning format of traditional gastrique flavour
  • Add at any stage of the cooking process

Roast

  • Roast notes are created during the slow caramelising process of vegetables and meat
  • Roast will deliver a round umami taste and boost roasted taste notes in any dish
  • It can be used on its own as a drizzle on meat and vegetables or added to a sauce for a more impactful roasted notes
  • Designed to deliver a consistent taste boost through a liquid seasoning format of traditional roast flavour
  • Add at any stage of the cooking process

My sauces are already really good, so why should I use the Signature range? 

Our Signature products can be used as top notes with your current sauces so that with only very limited ingredients you deliver several different sauces. Your base will remain the same but you can now create numerous sauces with on-trend, authentic and unique flavours. This will enable you to differentiate your menu from competitors and (where relevant) allow you to charge a premium, generating added margin to your dish. 

 

How do I use these ingredients? 

You can use them at any stage of the cooking process. Either mix them in your stock, reduce and create your finish sauce as you would normally do, just with a new flavour, or simply add at the end of the process as a top note. 

 

Doesn’t this just add extra cost to my recipe? 

Not really and it depends how you are using them. You can add one of the flavours on top of your base sauce and add value to it. By adding value you also have a reason to charge a premium for your dish and therefore with a small additional cost you can increase your margin. You can use the Signature pastes and liquid seasoning with any other stocks, bouillons or sauces (scratch-made, CHEF or any other brand). You're probably already adding a few ingredients/infusions to your base sauces to create more depth and flavours so why not try a few Signature products to compare and see how they can help you achieve better consistency easily and in a cost effective way.
