In France, 1976, our team of chefs developed the first and iconic dehydrated “Thickened Veal Jus” recipe with the ambition to help professional chefs uphold their high standards in increasingly challenging kitchen environments. Since then we never stopped innovating and working with chefs to deliver the most suitable solutions to them.
CHEF® Signature is a range of authentic, on-trend pastes and liquids that provide full freedom in menu development and experimentation with taste, whilst allowing you to develop your own signature touch.
The range consists of four pastes in black garlic, lemon, red and port wine reduction and white wine reduction, and two liquid seasonings, gastrique and roast.

Consumers are increasingly aware of new culinary trends and ingredients from around the world and expect to see and taste them in their local restaurants. We’ve created this new range to help you to easily add on-trend, delicious and authentic flavours to your base stocks and sauces, in order to create unlimited dish combinations and deliver on customers’ expectations.
My sauces are already really good, so why should I use the Signature range?
Our Signature products can be used as top notes with your current sauces so that with only very limited ingredients you deliver several different sauces. Your base will remain the same but you can now create numerous sauces with on-trend, authentic and unique flavours. This will enable you to differentiate your menu from competitors and (where relevant) allow you to charge a premium, generating added margin to your dish.
How do I use these ingredients?
You can use them at any stage of the cooking process. Either mix them in your stock, reduce and create your finish sauce as you would normally do, just with a new flavour, or simply add at the end of the process as a top note.
Doesn’t this just add extra cost to my recipe?
Not really and it depends how you are using them. You can add one of the flavours on top of your base sauce and add value to it. By adding value you also have a reason to charge a premium for your dish and therefore with a small additional cost you can increase your margin. You can use the Signature pastes and liquid seasoning with any other stocks, bouillons or sauces (scratch-made, CHEF or any other brand). You're probably already adding a few ingredients/infusions to your base sauces to create more depth and flavours so why not try a few Signature products to compare and see how they can help you achieve better consistency easily and in a cost effective way.
