Method
INGREDIENTS
750g GARDEN GOURMET Fillet Pieces
3 red pepper, sliced
3 yellow pepper, sliced
2 large onions, sliced
2½ tbsp fajita seasoning mix
2tbsp olive oil
TO SERVE:
20 small seeded or wholewheat wraps
2 x 200g cans sweetcorn in water, drained
500g bag salad leaves
250g fresh tomato salsa
65g coriander leaves
1 red onion, diced
3 small avocado, diced
Squeeze of lime juice
Freshly ground black pepper
- Preheat the oven to 180°C (160°C for fan ovens) or Gas Mark 4. Cover the wraps in a large sheet of foil. Place on a baking tray and warm in the oven for 5-8 minutes.
- Heat the oil in a large non-stick frying pan and cook the peppers and onion until they start to caramelise, set aside on a plate. Add the GARDEN GOURMET Fillet Pieces to the pan and cook until turning light golden brown, return the vegetables to the pan, add the seasoning and cook for a further minute.
- Make a quick corn salsa – mix the sweetcorn with the diced onion, avocado and lime juice. Sprinkle with the coriander leaves. Season to taste with black pepper.
- Place everything into bowls or plates on the table and let everyone help themselves!
