Vegan Asian Cashew Stir Fry

A very quick and easy vegan Asian stir fry recipe that can be prepared in advance and just cooked in 8 mins when you are ready to eat. Packed full of vegetables to give it texture and so much flavour. 

What makes our Vegan Stir Fry recipe special:

This mouth-watering vegan stir fry can be prepared in advance and you can use any leftover veg that has previously been cooked. Although we haven’t included rice or noodles you can certainly add either if you wish. 

As the GARDEN GOURMET® Fillet Pieces can be cooked from frozen there is no need to worry about food waste.

Method

Ingredients

800g GARDEN GOURMET Fillet Pieces 
40ml oil    
600g Chinese cabbage 
200g bell peppers   
250g red onions  
200g mange tout 
150g baby corn 
100g baby spinach

      

Stir-fry sauce  

30g CHEF® Signature Black Garlic Paste  
60ml low salt soy sauce   
20g grated ginger 
 

Garnish  

100g spring onions  
20g red chili  
50g toasted cashew nuts 
 

  1. Prepare and cut all the vegetables (cabbage, bell peppers, red onions, baby corn, mange tout & wash spinach). 
  2. Cut the spring onions and chili in julienne and place in ice water until served.  
  3. Mix CHEF Black Garlic, soy and grated ginger together.    
  4. Stir-fry the GARDEN GOURMET Fillet Pieces in oil and add veggies step by step to cook evenly. 
  5. Deglaze the stir-fry with the sauce and reduce to a glaze. 
  6. Sprinkle on top of the vegan stir fry red chili, spring onions and cashew nuts and serve

  • Serve this vegan stir fry recipe with rice or noodles.  
  • Serve Thai Nam Jim and coriander a part.
