Vegan Penne a la Pepperoncini Pasta

Method

INGREDIENTS 

600g  GARDEN GOURMET Vegan Mince 

12g red chili  

8g garlic clove  

300g grilled red bell peppers 

30ml olive oil  

30ml CHEF® Vegetable Liquid Concentrate  

600g rocket leaf 

1 L MAGGI® Rich & Rustic Tomato sauce

800g penne pasta  

40g parsley 

 

Serve with Side salad 

300g baby gem lettuce 

250g baby chard leaf 

250g baby vine tomatoes, cut into ¼’s 

200g diced avocado 

150g cucumber, roughly grated 

120g finely sliced red onions 

150g sweet fresh peas 

15g mint 

  1. Cut/chop garlic, chili and grilled bell peppers.    
  2. Sauté garlic and chili in olive oil and add GARDEN GOURMET Vegan Mince, MAGGI Rich & Rustic Tomato Sauce and CHEF Vegetable Liquid Concentrate. Cook the sauce for 5-7 min.   
  3. Roughly pick parsley leaves and blanch it in salted water.  
  4. Cook the paste in salted water al dente. 
  5. Mix cooked pasta, pepperoncini sauce, rocket and blanched parsley.  
  6. Serve the vegan penne pasta with tossed side salad.

Chef's Tip

  • Use whole grain pasta for increased fibre. 
  • Use the pepperoncini sauce in a cannelloni or lasagne.
