Method

Ingredients

50 Garden Gourmet Vegan Balls
900mls Maggi Rich & Rustic Tomato sauce
40ml Olive oil
50g Fresh Red chillies deseeded and chopped
50g Fresh Green chillies, chopped
10g Crushed Garlic
20g Fresh basil, torn, leaving some to garnish

 

To serve:

1kg Wholemeal spaghetti, cooked
20ml Olive oil (for cooking spaghetti)
40g Chopped basil
Side Salad
800g Baby gem lettuce, sliced
200g Baby plum tomatoes, halved
200g Cucumber, sliced
100g Carrot ribbons
100g Red pepper, sliced
150g Beetroot, sliced

  1. Cook the wholemeal spaghetti according to the packet instructions in boiling water and olive oil.
  2. Heat the oil in a cooking pot, add the chillies and garlic then fry for 5 minutes over a gentle heat until they start to brown.
  3. Add the MAGGI Rich & Rustic, bring to the boil and season to taste.
  4. Add the GARDEN GOURMET Vegan Balls and most of the basil (leave a few springs to garnish), cook for 10 minutes on a medium heat.
  5. Mixed the cooked pasta with the arrabbiata sauce and serve in a dish, placing the meatball on top.
  6. Decorate with the torn basil.
  7. Serve with the prepared salad on the side.

Chef's Tip

  • When cooking this vegan pasta recipe retain 100mls of the water used to cook the spaghetti in. Use the water to let down the arrabbiata sauce as required.
  • Use vegan parmesan cheese to grate on top of the dish for added flavour and decoration.
