Method
INGREDIENTS
10 pc GARDEN GOURMET® Vegan Breaded Fillet
550g baby romaine lettuce, washed
500g asparagus, trimmed
2 shallots, peeled and sliced into rings
100g avocados, diced
350g cherry tomatoes
100g black olives, pitted
Vinaigrette:
15g lemon juice
15g balsamic vinegar
50 ml water
50 ml olive oil
- Make up the vinaigrette and add cubes of avocado, cherry tomatoes, and olives to the vinaigrette.
- To cook the GARDEN GOURMET Breaded Fillets, place on a lined backing tray with greaseproof paper and bake in a preheated oven at 200⁰C (Fan 180⁰C) or Gas mark 6, for: Defrosted: 5-6 minutes Frozen: 8-10 minutes.
- Cut 2/3 of the asparagus in half and grill in a grill pan.
- Take the rest of the asparagus and slice thin on a mandolin and put in ice water to crispy up till service.
- Slice shallot onions into thin rings, and then wash and cut the salad.
- Assemble the salad with all the ingredients. Enjoy!
