Method
INGREDIENTS
10 GARDEN GOURMET® Sensational™ Cumberland Sausages
15 medium eggs
2 medium onions, peeled and finely chopped
800g new potatoes, cooked and cut into 1cm dice
3 red peppers, deseeded and sliced
100g black olives, pitted
pinch of cracked black pepper
2 tbsp olive oil
300g tender stem broccoli, chopped into 2cm slices
50g flat parsley, chopped
Tomato Salad:
420g cherry tomatoes, cut in half
20g flat parsley, chopped
1 tbsp basil oil
- Oil the small cocottes, or a thick bottomed iron pan with the olive oil.
- Heat a large non-stick frying pan over a medium heat, add the remaining oil followed by the onion, potatoes, olives and peppers and broccoli and sauté until golden brown. Divide the mixture between 10 cocottes or skillets.
- To cook the GARDEN GOURMET® Sensational™ Cumberland sausages, add the oil to a large frying pan and cook the sausages according to the cooking instructions on pack.
- Whisk eggs together, add the parsley and season with cracked black pepper, add to the vegetable mixture and bake the tortilla at 200°C for 15-20 min.
- To make the tomato salad, mix all the ingredients together in a bowl.
- Cut GARDEN GOURMET® Sensational™ Cumberland Sausage into slices and serve with the tortilla and tomato salad.
