Method

INGREDIENTS

20 GARDEN GOURMET® Sensational™ Cumberland Sausages 

1 red onions, sliced  

500g baby new potatoes, quartered 

2 red peppers, sliced 

2 yellow peppers, sliced 

3 large courgettes 

3 fat garlic cloves, crushed 

3tsp cumin seeds 

3tsp smoked paprika 

1 lemon, juiced  

Freshly ground black pepper 

3tbsp olive oil 

330g cherry tomatoes 

handful flat leaf parsley chopped 

 

To Serve: 

300g steamed kale 

  1. Preheat the oven to 180°C.
  2. Put the onion, potatoes, peppers, and courgettes into a large roasting tin.  
  3. Mix the crushed garlic with the oil, lemon juice and spices.
  4. Season with salt and black pepper and then whisk with a fork. 
  5. Pour the marinade over the veg and cover with foil. 
  6. Roast in the oven for 30 minutes. 
  7. Remove the foil, add the sausages and tomatoes, toss everything together and roast for a further 20-30 minutes until the sausages are browned.  
  8. Steam the kale and serve!
