Method
INGREDIENTS
20 GARDEN GOURMET® Sensational™ Cumberland Sausages
1 red onions, sliced
500g baby new potatoes, quartered
2 red peppers, sliced
2 yellow peppers, sliced
3 large courgettes
3 fat garlic cloves, crushed
3tsp cumin seeds
3tsp smoked paprika
1 lemon, juiced
Freshly ground black pepper
3tbsp olive oil
330g cherry tomatoes
handful flat leaf parsley chopped
To Serve:
300g steamed kale
- Preheat the oven to 180°C.
- Put the onion, potatoes, peppers, and courgettes into a large roasting tin.
- Mix the crushed garlic with the oil, lemon juice and spices.
- Season with salt and black pepper and then whisk with a fork.
- Pour the marinade over the veg and cover with foil.
- Roast in the oven for 30 minutes.
- Remove the foil, add the sausages and tomatoes, toss everything together and roast for a further 20-30 minutes until the sausages are browned.
- Steam the kale and serve!
