Method

INGREDIENTS

20 GARDEN GOURMET® Sensational™ Cumberland Sausages 

2 white onions, sliced

3 x 400g cans chopped tomatoes 

30g sun dried tomato puree  

2 carrots, sliced 

2 small sprigs or 1tbsp  

Fresh thyme leaves 

400g can cannellini beans, rinsed and drained 

3 fat garlic cloves, crushed 

400g button mushrooms, quartered 

160ml red wine  

500ml vegetable stock 

Freshly ground black pepper 

3tbsp olive oil 

 

To Serve: 

300g Tenderstem broccoli  

500g crusty bread 

  1. In a large pan fry the onion, carrot, and mushrooms in 2tbsp oil until they start to turn brown.   
  2. Add the garlic and cook for a further minute.  
  3. Add the wine and bubble until reduced by half.  
  4. Then add the tomatoes, tomato puree, wine, stock and thyme.  
  5. Simmer for 20-30 minutes and let the flavours get to know each other. 
  6. In a separate pan cook the sausages in 1tbsp oil according to the cooking instructions on pack.  
  7. Add to the cassoulet and serve with some crusty bread.
